ION Harbour celebrates the very best of Maltese ingredients in signature style. Chef patron Simon Rogan is a pioneer of the farm-to-table movement and his menus are strongly guided by hyperlocal ingredients that are harvested, fished and foraged by the best and most sustainable local producers. The restaurant’s team includes restaurant manager James Christie, and executive chef Oli Marlow, who has worked alongside Simon for more than six years. Together they are positioning ION Harbour as a global destination restaurant for fine dining.
